The Big Cooking Contest

The excitement was great! We were able to choose any or all of the following ingredients:
eggs, cheese, tomatoes, mushrooms, onion, broccoli, salsa, or English muffins.
We had judges and photographers for the big event. Zeek figured everyone would make an omelet. However, each team came up with a different dish! A good time was had by all, and the judges had a difficult time selecting the winning team! Thanks everyone for being a great sport!

What would you do with these ingredients?

The winning team made this great dish!

Chinese Stir Fry

Zeek is in China, so he sent us a stir fry recipe! We are posting the recipe for you to follow. We are also posting 2 pictures on our picture page.

Chinese Stir Fry
Cut the tofu into cubes – 2 cm squares

Prepare sauce: mix in a small bowl:
1 TBS cornstarch and 4 TBS vegetable broth, 1 TBS soy sauce, 1 TBS oyster sauce, salt and pepper (to taste)
Whisk (mix) and set aside

Vegetables have been prewashed.
Cut 2 ribs of celery into ½ inch pieces on the diagonal.
Cut the broccoli heads off and cut them into bite sizes. Use some of the stalk, cutting them into bite sizes. (on the diagonal is nice)
Slice the mushrooms.
Cut the green onions into small circles.
Cut the red pepper into bite sizes.
Heat oil in the fry pan, and when the oil is hot add the vegetables and stir fry until the broccoli is tender.

Then you will add your sauce until it thickens.

Eat and enjoy!

Naana Mia Pizza

What is that?
Our pizza was made with naan bread. Naan bread is a very yummy bread from India. Zeek decided to mix cultures and make pizza (Italian) with naan bread.
First we went down to the garden to pick veggies for our pizza. We picked basil, onions, lettuce (yes, lettuce for our pizza!) and purslane. When we got back to our "kitchen" we cut the naan bread in half. We put a tomato and basil pasta sauce on the bread. Then everyone chose what they wanted on their pizza. Some put on black olives, red onion, and/or their goodies from the garden. Everyone put on Mozzarella cheese! Next we cooked our mini pizzas in a toaster oven or in a skillet! They were done in about 5 minutes. They were delicious!

Native American Chicken Soup

Zeek gave us this wonderful soup recipe!
You can cook your own chicken, but why not buy one of the cooked ones at the store?
Stock: cut meat off of the chicken and set it aside
Cook the rest of the chicken until the meat falls off of the bones. Take out all bones and skin from the pan.
In the Cuisinart blend: fresh garlic, cilantro, 4-6 tomatios, a few jalapeƱos, half an onion, a little salt, and cumin.
Add this to your stock as well as returning the chicken meat. Add 2 cans of hominy. Cook for about an hour.
Served well with fry bread!
The kids made their very own fry bread! They will publish a recipe soon.

How To Make a Spring Roll

  • Thank you Mrs. Webster for teaching us this!
  • 1 package Rice Paper (May brand)
  • 1 package Rice Vermicelli Noodles (Fortuna Brand)
  • 1 lb Shrimp, uncooked, de-veined with shells
  • 1/2 lb Prepared BBQ pork
  • 1 bunch Spearmint
  • 2 bunches Lettuce

    1. Bring water to a boil then add 1/2 package of noodles. Keep stirring to keep noodles from sticking together. Boil for 8-10 minutes.
    2. Drain and rinse noodles under cold water. Set aside.
    3. Rinse shrimp and add to a pot of boiling water. Bring water back to a boil and cook shrimp until they are all pink.
    4. Peel and cut shrimp in half length-wise. Set aside.
    5. Slice BBQ pork thinly. Set aside.
    6. Wash spearmint and take leaves off stems. Set leaves aside.
    7. Wash and remove stems from lettuce. Set aside.
    8. Take 1/4 of the rice papers and break in half.
    9. Place a 1/2 sheet of rice paper on top of a whole sheet at the diagonal and dip into bowl of warm water.
    10. Place on cutting board until soft.
    11. Starting towards the back corner of the sheets where there is no overlap, stack ingredients in the following order: lettuce leaf, noodles, 1-2 mint leaves, 2 pieces of cut shrimp, 2 pieces of pork.
    12. Fold nearest corner over ingredients, squeeze down and roll tight towards the middle. At the half-way point pull in corners and finish rolling.
    13. Place on plate cover tightly with saran wrap until ready to serve to keep them from drying out.
